Arabic Shawarma Wrap

🧾 Ingredients (4–5 servings) 400–500g chicken breast or thighs 4–5 pita or tortilla wraps 1 onion (sliced) 1 cucumber 1 tomato Lettuce Marinade: 3 tbsp yogurt 1 tbsp lemon juice 1 tsp cumin 1 tsp paprika ½ tsp turmeric Salt + pepper 1 tbsp olive oil Garlic sauce: 3 tbsp mayonnaise 1 tbsp yogurt 1 tsp minced garlic Salt 🧑‍🍳 How to Make Marinate the chicken in yogurt, lemon, and spices (30–60 mins). Cook in a pan on medium heat 8–10 mins until golden. Slice into thin strips. Make garlic sauce by mixing mayo + yogurt + garlic + salt. Warm the pita wraps. Add chicken + veggies + sauce → roll tightly.





Chicken Biryani

🧾 Ingredients 500g basmati rice 500–700g chicken (bone-in or boneless) 2 onions 2 tomatoes ½ cup yogurt 1 tbsp ginger–garlic paste Cooking oil Spices: 1 tsp cumin 1 tsp garam masala 1–1.5 tsp biryani masala Chili powder (to taste) Salt 🧑‍🍳 How to Make Rice: Wash rice → boil until 70% cooked → drain. Chicken masala: Fry sliced onions until golden. Add ginger–garlic, chicken, spices → cook 8–10 mins. Add tomatoes + yogurt → cook until thick. Layering (important): Bottom: chicken gravy Middle: rice Top: chicken + rice Cover, steam on low (dum) for 15–20 mins. Mix lightly and serve.





Creamy Tomato Pasta

Creamy Tomato Pasta

🧾 Ingredients 300–400g pasta (penne, fusilli, spaghetti) 1 chopped onion 3–4 garlic cloves 1 can crushed tomatoes (400g) 100ml cooking cream or milk Parmesan / cheddar Olive oil Salt, black pepper Optional: spinach, mushrooms, chicken 🧑‍🍳 How to Make Cook pasta in salted water → drain (save ½ cup pasta water). Pan → olive oil → onion 3 mins → garlic 1 min. Add tomatoes → simmer 6–7 mins. Add cream or milk → stir. Add cooked pasta → mix. Add cheese + a little pasta water → creamy texture. Season with pepper → serve.





West African Jollof Rice

West African Jollof Rice

🧾 Ingredients 2 cups long-grain rice 1 onion 2 tomatoes 1 small can tomato paste 1–2 bell peppers 2–3 garlic cloves 1 tsp paprika 1 tsp curry powder Salt Cooking oil Optional: chicken, sausage 🧑‍🍳 How to Make Blend tomatoes + bell peppers + garlic. Fry onion in oil → add tomato paste → cook until darker red. Add blended mix → simmer 10–12 mins. Add spices + salt. Add washed rice → coat evenly. Add enough water (~2 cups) → cover → low heat 20–25 mins. Stir occasionally → do not burn bottom (this gives flavour).
